1. HIBERNATOR 2024 - Tequila Barrel Aged Saison w/ Lime Peels & Sea Salt

Enjoy this edition of Hibernator 2024, a Saison aged in Tequila barrels for over a year. We absolutely loved how this Saison developed in the tequila barrels so we complemented the flavours with the addition of fresh lime peels and some salt, leaving enough room for flavours of the base beer to shine through. The result is a complex yet easy drinking beer, that’s a wonderful complement to your Christmas dinner or any special occasions to come.

2. HIBERNATOR 2024 - Barrel Aged Sour Golden Ale w/ Blackberry, Blueberry & Winter Spices

Hibernator 2024 Barrel Aged Sour Golden Ale was aged for 12 months in a (Tawse) Pinot Noir wine barrel and finished with fresh blackberry and blueberry juice. With the re-fermentation of the fruits, this light red coloured golden ale leaves a refreshing tartness and fruitiness on the pallet, that was elevated even further with the subtle addition of typical mulled wine spices (cloves, orange peels, pink peppercorns, cinnamon).

3. HIBERNATOR 2024 - Barrel Aged Imperial Stout w/ Cacao Nibs, Coconut, Vanilla & Nutmeg

This edition of Hibernator is an Imperial Stout that was aged in Booker’s Bourbon Barrels for 2 years and was finished on cacao nibs, shaved coconuts, vanilla and a touch of nutmeg tincture. The initial notes of bourbon are complemented with more and more chocolate and coconut as the beer warms up in the glass, and has a very subtle nutmeg finish at the end. A perfect sipper for a cozy winter night.
